It’s Sunday! <3
Which means it’s time for pancakes, right?

People always ask me for a recipe for my pancakes but honestly I don’t really use any recipe and just put together the ingredients by feeling. Anyway, I decided to measure the ingredients for you today and to write down a little recipe. Probably one of the easiest pancake recipes ever..

For one pancake stack you will need:
1 ripe Banana
100g of your favourite flour
150ml of your favourite plant milk
1tbsp corn starch
1tsp baking powder

Mash the banana with a fork and put it in a bowl. Add all the other ingredients and stir them together until you have a dough. Add the dough to a pan and bake the pancakes until they’re brown.

I recommend to not use a lot of oil but rather to use a non-sticking pan. If you don’t have a good non-sticking pan (like me), try to just spread a tiny bit of oil (I use coconut) on the pan. I found out that after baking the first pancakes that way, you don’t need to add any more oil afterwards even though the pan may seem completely dry – it’s magic!

When it comes to toppings, there are soo many things that you can add that I didn’t want to include a specific one in the recipe. But just to give you some inspiration for toppings, I tell you what I love to eat my pancakes with:

Soy or coconut yoghurt, warm berries, chocolate sauce, peanut butter, jam, maple syrup, nuts, apple sauce,..
