Cozy Autumn Breakfast – Baked Apple with Cinnamon & Rum

Yay, it’s autumn! <3 The time of the year for books, tea, cuddly socks, movie nights, walks through the colorful forest, pumpkin, and for cozy mornings with a good warm breakfast.

This baked apple is seriously the best thing I’ve had in a while so I just need to share this easy little recipe with you. I just love apples (who doesn’t?) and you can never go wrong with the combination of apples, cinnamon and raisins. The taste is like autumn in your mouth.

For one baked apple you will need:

1 big apple
1-2ml rum aroma (or 1 tsp rum)
1tsp vegan butter
1tbsp raisins
1tbsp walnuts
50g marzipan
cinnamon
ground cloves
ground lemon zest

Mix the raisins with the rum and let it soak for a few hours, I recommend letting it soak overnight. If you use rum aroma, add a little bit of water to your raisins. If there is too much liquid in form of rum or water in your raisins after you let them soak, take it off a little so that your raisins-rum mix isn’t too watery.

Cut off the top of your apple and scoop out the apple core. Let your butter melt and mix the liquid butter with the raisins, walnuts and a pinch of cinnamon, cloves and lemon zest. After that add the marzipan and knead all of the ingredients to a little dough ball. Fill your apple with the dough and put it in the oven for about 15-20min on 200°. I recommend checking your apple from time to time, it tastes best when there’s a brown crust on the top.

I ate my baked apple with vanilla sauce – the classic way – but I bet it tastes amazing with maple syrup or warm chocolate sauce, too.
